IGI FOOD LAW is a team of food law experts with experience gained also in Brussels and Washington, D.C.

Since 2006, we have supported manufacturers, distributors, industry associations and law firms in projects requiring in-depth expertise, a strategic approach and a strong understanding of regulatory practice.

We combine deep knowledge of European Union food law with a broad market and institutional perspective. We do not only analyse regulations — we primarily help translate them into business decisions, safe courses of action and coherent regulatory strategies.

Food Law and Regulatory Strategy Expert, President of IGI FOOD LAW. She has been associated with IGI FOOD LAW from the very beginning and, since 2009, has led the firm’s development, combining leadership, top-level substantive expertise and many years of experience in complex regulatory projects for the food sector.

She is a valued partner for domestic and international law firms seeking expert regulatory support in food law matters.

For more than two decades, she has supported manufacturers, distributors, industry associations and advisory partners in navigating the complex framework of European Union and national food law. Her experience spans Poland, Brussels, Singapore and Washington, allowing her to combine deep knowledge of European regulations with a broad international perspective.

Candidate for the EFSA Management Board (2025 call), with hands-on experience in EU food law, EFSA-related procedures and regulatory strategy across the food sector.

She holds a doctoral degree in medical sciences in the field of health sciences, which brings a distinctive interdisciplinary perspective to her work at the intersection of food regulation, public health and market practice.

She specialises in the interpretation and practical application of food law requirements across the entire product lifecycle — from concept development and regulatory qualification, through product design and communication, to placing on the market and distribution. She is particularly valued for her experience in EU procedures, including those relating to novel foods, nutrition and health claims, food additives, food supplements and food for special medical purposes.

One of her key areas of expertise is the labelling and advertising of food products. She supports clients in assessing the compliance of product communications, developing safe-market strategies, and preparing substantive arguments for regulatory proceedings, inspections, and regulatory and market disputes.

A significant strength of her work lies in her ability to combine regulatory expertise, institutional experience and a broad strategic perspective. Thanks to her strong understanding of how national institutions, including inspection authorities, function, as well as EU processes and legislative developments, she supports clients not only in ensuring compliance but also in preparing for upcoming regulatory changes.

In 2011, she founded the Summer School of Food Law and has led it ever since. It is one of the most recognised and highly regarded workshop series in Poland dedicated to the practical application of food law. She is also a speaker regularly invited to national and international conferences, from Ankara to Boston.

She is the author and co-author of publications in food law, including a chapter on the legal foundations of functional food in the international publication Nutraceutical and Functional Food Regulations in the United States and Around the World. She also regularly publishes articles and commentaries on the practical application of food law.

Joanna Olszak

Food law expert with more than 15 years of experience. Since 2008, she has supported companies in navigating the complex area of food law, combining regulatory knowledge with academic training in food technology and dietetics. This allows her to look at products not only through the lens of legal requirements but also through the lens of composition, quality, technology, and market context.

In her day-to-day work, she helps clients turn legal requirements into practical decisions — from formulation to labelling and consumer communication. Her analyses are concrete, grounded in business practice and useful for regulatory, R&D and quality teams. She is known for her thoroughness and ability to identify nuances that often determine whether a product is compliant and safe to market.

Her particular areas of focus include food additives, labelling, food for children, and food contact materials and articles. She supports clients not only in assessing compliance but also in finding solutions that can be implemented in practice—in a way that is proportionate and tailored to the company’s business.

She also delivers training sessions and workshops, combining solid expertise with a practical approach. She explains complex rules clearly and accessibly and helps teams make better day-to-day decisions.
